Thirsty Thursday Cocktail- Bubbly Bees and Rye Cocktail

Since announcing our first 1827 Spirits Rye Whiskey I’ve been itching to make Rye cocktails. Our Rye Whiskey is available in our tasting room only. It is a limited rum of 75 bottles and the next batch is in the works.
Todays cocktail is a Bubbly Bees and Rye. Whiskey and honey are really a match made in heaven. The key to using honey in cocktails is making a honey simple syrup. A two to one ratio is good. Two parts honey to one part hot water. Mix honey into hot water and stir until it is dissolved. This can be made ahead and will store refrigerated for a few weeks.
Recipe-
2oz 1827 Spirits Rye Whiskey
1oz honey simple syrup
juice of one lemon
Splash of ginger ale, club soda or sparkling wine to top off the glass.
In a cocktail shaker, add whiskey, honey syrup and lemon juice. Stir with a bar spoon to make sure the honey simple syrup dissolves. Add ice and Shake vigorously. Strain into a cocktail glass with a large ice cube. Garnish with a lemon slice or curl. Enjoy!
